Ingredients
For the crumbs:
- 100g Mum’s Mill Quick Bread Mix
- 50g cane sugar
- pinch of salt
- 80g cold butter
For the cream:
- 100ml heavy whipping cream
- 180g condensed milk
- 3 tablespoons icing sugar (if the condensed milk is not sweetened)
- 1 teaspoon vanilla extract
- juice of 2-3 limes
For the decoration:
- lime zest
- thinly sliced lime
Step by Step Instructions
For the Crumbs:
- Preheat the oven to 200°C/400°F/Gas 6. Line a baking tray with baking paper.
- Cut the butter into small cubes and rub it in to the Mum’s Mill Quick Bread Mix, sugar and salt to form bread crumbs.
- Sprinkle the crumbs on the baking tray and bake for 15-20 minutes or until golden brown.
For the Cream:
- Whip the heavy whipping cream into stiff peaks either with a hand whisk or electric beater.
- Stir the vanilla extract, lime juice and icing sugar (if using) into the condensed milk.
- Carefully stir this into the whipped cream.
To assemble
- Layer the crumbs and the cream in a glass of your choice, and then top off with the cream.
- Decorate with lime zest and a slice of lime.*
* Refrigerate for a couple of hours before serving.
